Bread is sacred in Morocco — khobz, the round flatbread, appears at every meal, is used as an edible utensil to scoop tagine and salads, and is never wasted. In the old Medina, one of the loveliest traditions endures: many households make their dough at home but do not have an oven, so they carry the shaped loaves, each marked with the family's own sign, to the communal wood-fired ferran, where the neighbourhood baker bakes everyone's bread and the whole community's loaves rise together in the same oven.

This experience walks you through the whole cycle. In a riad kitchen you learn to make khobz from scratch — mixing flour (often a blend of white and semolina), yeast, salt and water, kneading it to a smooth dough, and shaping and proving the round loaves. A cook explains the small variations: the addition of semolina for texture, anise or sesame seeds, and the difference between everyday khobz and richer breads. You may also make msemen or harcha alongside.

The heart of it is the ferran itself. You carry your risen loaves through the derbs to a genuine communal oven — a deep, wood-fired chamber often tucked beside a hammam that shares the same furnace — and hand them to the baker (the ferran), who slides them in on a long paddle among the neighbourhood's bread and knows exactly when each is done. Watching this centuries-old social institution at work, and understanding how it stitches a neighbourhood together, is a side of the Medina few visitors see.

You leave with warm, fresh bread you made and baked the traditional way, and usually eat some on the spot with olive oil, honey or amlou.
