A private riad dinner turns that space over to you: a candlelit table set beside the courtyard fountain or up on the roof terrace under the stars, with the noise of the Medina fading to a distant hum and a cook preparing your meal in the house kitchen.

The menu is a full Moroccan feast served in courses. You typically begin with a spread of hot and cold salads — zaalouk, taktouka, carrots with cumin, marinated olives — and warm khobz bread, then a main such as a lamb tagine with prunes and almonds, chicken with preserved lemon, or a hand-rolled couscous. Dinner finishes with a Moroccan dessert or fresh fruit and orange-blossom pastries, and mint tea poured at the table.
