Marrakech does its best work in the last hour of daylight, and the place to watch it is a rooftop. Marrakech is a low, flat-roofed city by design — the old sumptuary laws kept buildings below the height of the Koutoubia's minaret, which is exactly why its rooftops make such uninterrupted viewpoints today. A handful of riads and hotels near Jemaa el-Fnaa have turned their terraces into proper bars, with cushioned seating, awnings for the midday sun and a serious drinks programme rather than a warm beer and a view. This experience reserves you a table at one of the better ones, timed so you are seated with a drink in hand as the light turns.

The sequence is simple and does not need rushing. You arrive with perhaps forty minutes of daylight left, order from a list built around Moroccan ingredients — a saffron and gin serve, an orange-blossom spritz, a smoked amlou old-fashioned, or a good mocktail of pomegranate, mint and lime for anyone not drinking — and watch the Medina below change colour. The Koutoubia is the anchor of the view from most of the good terraces: its sandstone tower runs gold, then pink, then a deep rose as the sun drops behind the Atlas, and its resident storks wheel and resettle on the parapet.

As the light fades the call to prayer sounds from minarets across the old city, overlapping and echoing in a way that is genuinely moving heard from above rather than at street level, and the swifts that nest in the Medina's walls come out to hunt low over the rooftops in the cooling air. Lanterns are lit at the tables, and the terrace settles into its evening rhythm — a good moment to order a second round or move on to dinner elsewhere in the Medina.

It works equally well as a couple's first evening in the city, a pre-dinner drink for a group, or a quiet contemplative hour on your own with a book and a view most visitors only glimpse from a rushed photo stop. Because tables are reserved in advance, you are seated rather than competing for a rail-side spot as the terrace fills.
